Ingredients:

  • 2 large cucumbers
  • 2 cloves of garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon sesame oil
  • 1 teaspoon chili flakes (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon toasted sesame seeds

 

Directions:

  1. Rinse the cucumbers and pat dry. Lay them on a cutting board and lightly smash them with the flat side of a knife blade to break them open. Cut the cucumbers into bite-sized pieces.
  2. In a mixing bowl, combine the minced garlic, rice vinegar, soy sauce, sugar, and salt. Mix well until the sugar and salt are dissolved.
  3. Add the cucumber pieces to the dressing and toss to coat evenly. Let the salad sit for 10-15 minutes to marinate.
  4. Before serving, drizzle with sesame oil and sprinkle with chili flakes (if using), fresh cilantro, and toasted sesame seeds.
