Ingredients:

  • 5 slices of white bread
  • 1/2 sweet pepper, diced
  • 3 green onions, chopped
  • 1 sausage, diced
  • 6 tbsp peas
  • 6 tbsp corn
  • 1/2 tsp salt
  • 2 eggs
  • 4 slices of mozzarella cheese
  • Oil for greasing

 

Directions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Prepare the Bread: Flatten each slice of bread with a rolling pin. Cut each slice into a circle that will fit into the cups of a muffin tin. Grease the muffin tin with oil and press the bread circles into each cup to form a base.
  3. Prepare the Filling: In a bowl, mix together the diced sweet pepper, chopped green onions, diced sausage, peas, corn, and salt.
  4. Assemble the Cups: Spoon the vegetable and sausage mixture into each bread cup. Crack an egg over each cup, being careful not to break the yolk.
  5. Add Cheese: Top each cup with a slice of mozzarella cheese.
  6. Bake: Bake in the preheated oven for about 10 minutes, or until the egg whites are set and the cheese is melted.
