Ingredients:

  • 40g dried cranberries
  • 100g dried apricots
  • 130g plums
  • 100ml water
  • 20g instant gelatine
  • 150g walnuts
  • 50g pine nuts
  • 50g almonds
  • 50g cashew nuts
  • 350g cottage cheese
  • 150g natural yogurt

 

Directions:

  1. Soak the dried cranberries, apricots, and plums in cold water for 15-20 minutes to activate their beneficial substances. Drain and dry.
  2. Mix instant gelatine with 100ml of water and let it swell.
  3. In a food processor, blend the nuts, cottage cheese, and yogurt until smooth.
  4. Gently melt the gelatine without boiling, then temper with a portion of the nut and cheese mixture before combining everything together.
  5. Pour into a prepared mold from a cut-open juice or milk carton and refrigerate for at least 2 hours to set.
  6. Unmold by cutting the carton away and slice to serve.
