Ingredients:

  • 1 tbsp Olive oil
  • 450g/1lb Ground beef
  • 1 Onion, chopped
  • 1 big garlic clove, minced
  • Salt and black pepper, to taste
  • 1/2 tsp Sweet Paprika
  • 3-4 medium potatoes, diced
  • 4-6 Eggs
  • Cheese of your choice, grated
  • Chives, chopped

 

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion is soft, about 5-7 minutes. Season with salt, black pepper, and sweet paprika.
  2. Add diced potatoes to the skillet and cook for 10-12 minutes, or until potatoes are tender and golden.
  3. Make small wells in the potato and beef mixture and crack an egg into each well. Cover the skillet and cook until eggs are set to your liking, about 4-6 minutes.
  4. Sprinkle grated cheese over the top and cover again for a minute to let the cheese melt.
  5. Garnish with chopped chives and serve hot.
