- Prepare the Dried Apricots: Pour hot water over 80g of dried apricots and let them soak for a few minutes to soften.
- Drain the water from the apricots and finely chop them.
- Prepare the Nuts and Seeds: Finely chop 50g of walnuts.
- Measure out 100g of peanuts, 30g of pumpkin seeds, 30g of sunflower seeds, and a small amount of sesame seeds.
- Chop 50g of almonds.
- Combine the Ingredients: In a large mixing bowl, combine the chopped dried apricots, walnuts, peanuts, pumpkin seeds, sunflower seeds, sesame seeds, dried cherries, candied fruits, and almonds.
- Add one egg white and 20g of honey to the mixture.
- Mix everything well until all ingredients are evenly coated.
- Form the Cookies: Preheat your oven to 180°C (350°F).
- Place an 8cm diameter round cookie cutter on a parchment-lined baking sheet.
- Fill the cookie cutter with the mixture and press it down firmly to form a cookie shape.
- Carefully remove the cookie cutter and repeat the process with the remaining mixture.
- Bake the Cookies: Bake in the preheated oven for about 25 minutes, or until the cookies are golden brown and set.
- Allow the cookies to cool on a wire rack before serving.
