Healthy No-Sugar Nut and Fruit Cookies

  • 80g dried apricots
  • 50g walnuts, finely chopped
  • 100g peanuts
  • 30g pumpkin seeds
  • 30g sunflower seeds
  • Some sesame seeds
  • 100g dried cherries
  • 30g candied fruits
  • 50g almonds
  • 1 egg white
  • 20g honey

Method
 

Preparation
  1. Prepare the Dried Apricots: Pour hot water over 80g of dried apricots and let them soak for a few minutes to soften.
  2. Drain the water from the apricots and finely chop them.
  3. Prepare the Nuts and Seeds: Finely chop 50g of walnuts.
  4. Measure out 100g of peanuts, 30g of pumpkin seeds, 30g of sunflower seeds, and a small amount of sesame seeds.
  5. Chop 50g of almonds.
  6. Combine the Ingredients: In a large mixing bowl, combine the chopped dried apricots, walnuts, peanuts, pumpkin seeds, sunflower seeds, sesame seeds, dried cherries, candied fruits, and almonds.
  7. Add one egg white and 20g of honey to the mixture.
  8. Mix everything well until all ingredients are evenly coated.
  9. Form the Cookies: Preheat your oven to 180°C (350°F).
  10. Place an 8cm diameter round cookie cutter on a parchment-lined baking sheet.
  11. Fill the cookie cutter with the mixture and press it down firmly to form a cookie shape.
  12. Carefully remove the cookie cutter and repeat the process with the remaining mixture.
  13. Bake the Cookies: Bake in the preheated oven for about 25 minutes, or until the cookies are golden brown and set.
  14. Allow the cookies to cool on a wire rack before serving.
  15. Enjoy these healthy, no-sugar-added cookies as a snack or a dessert!
