  • 1 1/2 cups shredded zucchini do not squeeze out moisture
  • 1/4 cup sliced green onions optional
  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter, melted and cooled
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation
  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Grease a regular loaf pan and set it aside.
  3. Prepare the Zucchini: Slice the zucchini . Do not squeeze out the moisture as it helps keep the bread moist.
  4. Mix Wet Ingredients: In a large mixing bowl, combine the shredded zucchini, sliced green onions (if using), eggs, sour cream, and melted butter.
  5. Mix until well combined.
  6. Add Cheese: Fold in the shredded cheddar cheese, ensuring it is evenly distributed throughout the mixture.
  7. Combine Dry Ingredients: In a separate bowl, mix the all-purpose flour, baking powder, baking soda, and salt together.
  8. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix, as this can result in dense bread.
  9. Bake: Pour the batter into the greased loaf pan, smoothing the top.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  12. Slice and serve.
