Stringy Katmer

  • 4 cups of flour 480 grams
  • 1 teaspoon of salt 8 grams
  • 2 glasses of water 400 ml
  • 150 grams of butter
  • 1 tea glass of oil 100 ml

Method
 

Preparation
  1. Prepare the Dough: In a large bowl, mix 4 cups of flour and 1 teaspoon of salt.
  2. Gradually add 2 glasses of water and knead for 3-4 minutes until a medium-hard dough forms.
  3. Cover the dough airtight and let it rest for 30 minutes.
  4. Rest and Knead: After 30 minutes, take the dough to the table and knead again for 3-4 minutes. The dough will get softer as it sits.
  5. Cover it airtight again and leave it to rest for another 30 minutes.
  6. Divide and Shape: After the second resting period, the dough should have reached the desired consistency.
  7. Do not use flour at this stage. Divide the dough into 8 equal parts and roll each part into a ball.
  8. Roll and Cut: Take the first dough ball and roll it out lengthwise with the help of some flour.
  9. Using a roulette cutter, cut the dough very thinly. The thinner you cut, the better the result.
  10. Generously apply the mixture of 150 grams of butter and 1 tea glass of oil (100 ml) all over the dough.
  11. Assemble: Assemble the dough as shown in the video and set it aside.
  12. Prepare all the remaining dough in the same way.
  13. Shape the dough immediately without waiting. Stretch the dough as shown, then wrap it in your hands and press lightly to set the shape.
  14. Rest Again: Cover the prepared dough and leave it for 15 minutes.
  15. Cook: After 15 minutes, press on the dough and spread it a little.
  16. Heat a pan on medium heat. Carefully drop the dough into the pan and cook by constantly turning it upside down.
  17. Turn frequently to ensure even browning and to avoid any raw dough inside.
  18. Remove the cooked bread from the pan and cook the remaining layers in the same way.
  19. Serve: The breads are ready to serve. Enjoy them for breakfast or tea time.
