Spicy Cauliflower Steaks with Garlic Vegan Mayo

  • Vegan mayo store-bought or homemade
  • Sriracha to taste
  • 2 cloves garlic, minced or garlic powder
  • Salt to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Prepare the Cauliflower Steaks: Cut off the bottom stem end from the cauliflower to create a flat base. Stand the cauliflower up on a cutting board.
  2. Using a large, sharp knife, trim away the sides and then cut the remaining head into 2 or 3 1-inch “steaks.” Reserve the sides for another use.
  3. Make the Spicy Mayo: In a small bowl, mix together the vegan mayo, sriracha, and minced garlic.
  4. Cook the Cauliflower Steaks: Add about ¼ cup of water and a pinch of salt into a large skillet. Bring to a gentle simmer.
  5. Add the cauliflower steaks to the skillet, cover with a lid, and let them cook for about 2-3 minutes to soften.
  6. Bake the Cauliflower Steaks: Preheat your oven to 400°F (200°C).
  7. Remove the cauliflower steaks from the skillet and place them onto a baking sheet.
  8. Spread a generous amount of the spicy mayo on top of each steak.
  9. Bake for about 20-25 minutes, until the cauliflower steaks start getting brown spots.
  10. Serve: Garnish with fresh parsley.
  11. Serve immediately.
