- Pit the dates: If your dates are not pitted, remove the seeds before using.
- Toast the nuts: Lightly toast the peanuts, almonds, pistachios, and hazelnuts in a dry pan over medium heat for a few minutes to enhance their flavor. Be careful not to burn them.
- Combine in a food processor: Add the toasted nuts and pitted dates to a food processor. Pulse until the mixture becomes sticky and starts to clump together. If the mixture is too dry, add a few more dates.
- Add spices: Sprinkle in the cinnamon and cardamom. Pulse again until the spices are fully incorporated.
- Form into balls: Using your hands, take small portions of the mixture and roll them into bite-sized balls.
- Coat with sesame seeds: Roll each ball in sesame seeds to coat them evenly. This adds extra texture and flavor.
- Ready to eat: These energy balls are ready to be enjoyed immediately. You can serve them as a snack, dessert, or even a quick breakfast.
