  • 300g tofu, cut into squares: Soft and delicate, it absorbs the stew's flavors beautifully.
  • 300g Spam, cut into pieces: Adds a savory, salty richness to the stew.
  • Half an onion, sliced: Provides sweetness and depth to the dish.
  • A handful of green onions, chopped: Adds freshness and a mild onion flavor.
  • 1 slice of cheddar cheese: Melts into the stew, adding creaminess and a touch of tang.
  • Chili pepper (optional), sliced: For a bit of heat if you like your stew spicy.
  • 300ml water: The base of the stew, allowing the flavors to meld together.

Preparation
  1. Prepare the Ingredients: Cut the tofu into squares and the Spam into bite-sized pieces. Slice the onion and chop the green onions. If using, slice the chili pepper.
  2. Make the Seasoning Paste: In a small bowl, mix together the soy sauce, Gochujang, Doenjang, red pepper powder, and minced garlic. Add 3 tablespoons of water and stir until the seasoning forms a smooth paste.
  3. Cook the Stew: In a pot, add the 300ml of water and bring it to a gentle boil over medium heat.
  4. Add the sliced onions and let them cook for about 2-3 minutes until they start to soften.
  5. Stir in the seasoning paste, making sure it dissolves evenly in the water.
  6. Add the Spam pieces to the pot and cook for another 2-3 minutes to allow the flavors to blend.
  7. Add Tofu and Cheese: Gently place the tofu squares into the stew, being careful not to break them.
  8. Place the slice of cheddar cheese on top, allowing it to melt into the stew.
  9. Simmer and Serve: Reduce the heat to low and let the stew simmer for 5-7 minutes, until the tofu is heated through and the cheese is fully melted.
  10. Add the chopped green onions and sliced chili pepper (if using) to the pot. Stir gently to combine.
  11. Final Touches: Taste the stew and adjust the seasoning if needed. You can add more soy sauce or red pepper powder if you prefer a stronger flavor or more heat.
  12. Serve: Ladle the stew into bowls and enjoy it hot, perhaps with a side of steamed rice or crusty bread to soak up the flavorful broth.
