  • 1 1/2 cups Warm water about 100°F or 38°C
  • 1 teaspoon Active dry yeast
  • 1 1/2 teaspoons Sea salt
  • 1/4 cup Flaxseeds
  • 1/4 cup Sunflower seeds
  • 2 tablespoons Pumpkin seeds pepitas
  • 1 tablespoon Sesame seeds for the topping

  1. Mix the Base: In a large, wide-mouth glass jar or a high-sided glass bowl, combine the flour, salt, yeast, and all the seeds except for the sesame seeds. Pour in the warm water and stir with a wooden spoon or spatula until a shaggy, sticky dough forms and no dry flour remains.
  2. The Long Rest: Cover the jar loosely with a lid or plastic wrap. Let the seeded no knead jar dough sit at room temperature for 12 to 18 hours. This slow fermentation is what develops the complex flavors and creates the gluten structure without any physical kneading.
  3. Shape and Final Proof: Once the dough has doubled in size and looks bubbly, gently deflate it with a spatula. If you are baking directly in the jar, ensure the glass is oven-safe (like a tempered canning jar). Sprinkle the top with sesame seeds and let it rest for another 30 to 60 minutes.
  4. The Bake: Pre-heat your oven to 450°F (232°C). Place the jar on a baking sheet. Bake for 30 to 35 minutes until the top is golden brown and the internal temperature reaches approximately 200°F (93°C).
  5. Extraction and Cooling: Carefully remove the jar from the oven. Let it sit for 5 minutes, then slide a thin knife around the edges to release the bread. Transfer the loaf to a wire rack to cool completely before slicing.
