Scallion and Butter Pull-Apart Bread

  • 300g (2 cups) bread flour or wheat flour
  • 1 egg
  • 140g (0.6 cup) milk
  • 12g (1 tbsp) sugar
  • 3g (1 tsp) yeast
  • 3g (1/2 tsp) salt
  • 30g (2 tbsp) unsalted butter, softened
  • 80g (5 tbsp) butter, softened
  • Black pepper to taste
  • Scallion, chopped
  • Additional salt to taste
  • Egg wash 1 egg beaten with a little water
  • Sesame seeds for topping

Method
 

Preparation
  1. Prepare the Dough: In a large bowl, combine the bread flour, sugar, yeast, and salt. Mix well.
  2. In a separate bowl, whisk together the egg and milk. Gradually add this mixture to the dry ingredients, mixing until a dough forms.
  3. Add the 30g of unsalted butter to the dough and knead until smooth and elastic, about 10 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat the Oven: Preheat your oven to 175°C (350°F).
  6. Shape the Dough: Punch down the dough and roll it out into a rectangle.
  7. Spread the 80g of softened butter evenly over the dough.
  8. Sprinkle with chopped scallion, black pepper, and additional salt to taste.
  9. Roll the dough into a log and cut into equal pieces.
  10. Prepare for Baking: Place the pieces in a greased baking dish.
  11. Brush with egg wash and sprinkle with sesame seeds.
  12. Bake the Bread: Bake in the preheated oven for 25 minutes, or until golden brown.
  13. Let the bread cool slightly before serving.
