Savory Vegetable and Cheese Bake

  • 3 large potatoes, peeled and grated
  • 1 onion, finely chopped
  • Olive oil, for greasing and adding moisture
  • 1 carrot, peeled and grated
  • 1 bell pepper, cleaned and finely chopped
  • Salt, to taste
  • Chives, chopped for flavor and garnish
  • 3 eggs
  • 300 ml milk
  • 200 g wholemeal flour
  • 2 tsp baking powder
  • 150 g cheese, grated cheddar or mozzarella works well

Method
 

Preparation
  1. Prep the Vegetables: Peel and grate the potatoes. Set them aside in a large mixing bowl.
  2. Peel and finely chop the onion, adding it to the bowl.
  3. Peel and grate the carrot, adding it to the same bowl.
  4. Clean and finely chop the bell pepper, then add it to the bowl.
  5. Season and Mix: Add a generous pinch of salt to the vegetables.
  6. Chop a handful of chives and add them to the mixture for flavor.
  7. Prepare the Batter: Crack three eggs into the bowl.
  8. Add another pinch of salt, if desired, to enhance the flavors.
  9. Pour in 300 ml of milk, helping to moisten the mixture.
  10. Combine 200 g of wholemeal flour with 2 teaspoons of baking powder, then sift this into the vegetable and egg mixture. Stir until all components are well-incorporated.
  11. Let the Dough Rest: After mixing, let the dough rest for 15 minutes to allow the flour to hydrate and the baking powder to start working.
  12. Bake: Preheat the oven to 200°C (400°F).
  13. Grease a baking dish with olive oil and pour the batter into it. Smooth the top and place in the oven to bake for 45 minutes.
  14. Add Cheese and Finish Baking: Remove the dish from the oven and evenly sprinkle 150 grams of grated cheese over the top.
  15. Return the dish to the oven and bake for an additional 15 minutes, or until the cheese is melted and golden brown.
  16. Serve: Allow the bake to cool slightly before serving. Enjoy this savory vegetable and cheese bake warm, garnished with extra chopped chives if desired.
