Savory Spring Onion and Cheese Flatbread

  • 300 grams of flour approximately 2 cups
  • 1 teaspoon salt 5 grams
  • 1 teaspoon baking powder 5 grams
  • 200 milliliters warm water about 4/5 cup
  • 150 grams spring onions, finely chopped
  • 150 grams of hard cheese (such as cheddar or Parmesan), grated
  • 100 grams unsalted butter (about 1/3 cup), melted
  • Sesame seeds, for sprinkling
  • Vegetable oil, for frying

Method
 

Preparation
  1. Prepare the Dough: In a large mixing bowl, combine the flour, salt, and baking powder.
  2. Gradually add the warm water to the flour mixture, stirring continuously until a soft dough forms. If the dough feels sticky, sprinkle a little more flour.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Let it rest for 10 minutes.
  4. Add Flavor: Mix the chopped spring onions and grated cheese into the dough, ensuring they are evenly distributed.
  5. Divide the Dough: After the dough has rested, divide it into 8 equal portions. Roll each portion into a ball.
  6. Shape the Flatbreads: On a lightly floured surface, roll out each ball into a thin circle, about 1/8 inch thick.
  7. Cook the Flatbread: Heat a large skillet over medium heat and brush it with a little vegetable oil.
  8. Place one flatbread in the skillet, and cook for about 1-2 minutes or until the bottom is golden brown and bubbles form on top. Brush the top with some melted butter, then flip the flatbread.
  9. While the second side is cooking, brush the cooked surface with more melted butter and sprinkle with sesame seeds.
  10. Cook for another 1-2 minutes, then remove from the skillet. Repeat with the remaining dough.
  11. Serve: Serve the flatbreads warm as they are, or with dips such as hummus or a yogurt sauce.
