Red Lentil Hummus

  • For the Hummus: 200g dried red lentils 1 cup | 7 oz
  • 3 Tbsp tahini
  • 1/2 Tsp cumin
  • 1/2 Tsp salt
  • 180 ml ice cold water 3/4 cup
  • Juice of 1 lemon

Method
 

Preparation
  1. Rinse & Repeat: Rinse the dried red lentils thoroughly under cold running water until the water runs clear.
  2. Lentil Power: In a medium saucepan, combine the rinsed lentils with 4-5 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender. Drain any excess water.
  3. Cool Down: Allow the cooked lentils to cool slightly at room temperature or refrigerate for 15-20 minutes.
  4. Tahini Time (Optional): If needed, whisk 1-2 Tbsp of water or olive oil into the tahini to make it pourable.
  5. Blending Bliss: In a food processor or blender, blend the cooled lentils, tahini, cumin, salt, and lemon juice until smooth. Gradually add ice water until the desired consistency is reached.
  6. Taste Test Time: Adjust seasonings to taste.
  7. Serve & Enjoy: Transfer to a serving bowl, drizzle with olive oil (optional), and garnish with coriander and chili flakes.
