- Soak the Gelatin: In a small bowl, pour 10-15g of gelatin over ¼ cup of cold water. Let the gelatin sit for about 20 minutes to soften and bloom. This process ensures the gelatin dissolves evenly when heated.
- Dissolve the Gelatin: Once the gelatin has bloomed, gently heat the mixture in a saucepan over low heat or in the microwave for 20-30 seconds, stirring frequently, until the gelatin completely dissolves. Do not let the mixture boil. Set it aside to cool slightly.
- Chop the Pineapple: Drain the canned pineapple, reserving the juice. Chop the pineapple into small bite-sized pieces. Set aside both the chopped pineapple and the juice.
- Slice the Banana: Peel and slice the banana into thin rounds and set aside.
- Combine the Yogurt and Sugar: In a large mixing bowl, combine 400-500g of plain or flavored yogurt with 100g of sugar. Adjust the sugar amount based on your sweetness preference and the yogurt’s flavor. Whisk until the sugar dissolves and the mixture becomes smooth.
- Add the Gelatin: Slowly pour the dissolved gelatin into the yogurt mixture while whisking continuously. This will help distribute the gelatin evenly throughout the yogurt mixture, ensuring the dessert sets properly.
- Add Pineapple Juice: Pour in about ½ cup of the reserved pineapple juice to the yogurt mixture. This adds a hint of pineapple flavor to the dessert and complements the chopped fruits.
- Add the Pineapple and Banana: Gently fold in the chopped pineapple and banana slices into the yogurt-gelatin mixture. Be careful not to overmix, as you want the fruit pieces to stay intact.
- Transfer to Molds: Pour the mixture into individual serving molds or a large glass dish, depending on how you want to serve the dessert. Smooth the top with a spatula for an even surface.
- Refrigerate: Cover the dish or molds with plastic wrap and refrigerate the dessert for 2-3 hours, or until the gelatin has set completely. The dessert should be firm but wobbly when done.
- Unmold (Optional): If using individual molds, you can unmold the dessert by dipping the molds in warm water for a few seconds and then carefully inverting them onto a plate.
- Garnish and Serve: You can garnish the dessert with extra pineapple pieces, banana slices, or fresh mint leaves for a pop of color before serving. Enjoy chilled!
