  • 2.5 cups (350 g) flour: Forms the base of the dough. Use all-purpose flour for best results.
  • Salt, to taste: Enhances the flavor of the dough.
  • Olive oil, for greasing: Prevents the dough from sticking and adds a subtle flavor.

  1. Activate the Yeast: In a small bowl, combine the warm water, warm milk, sugar, and dry yeast. Stir and let it sit for about 5-10 minutes until the mixture is frothy. This step ensures that the yeast is active and ready to leaven the dough.
  2. Mix the Dough: In a large mixing bowl, combine the flour and a pinch of salt. Create a well in the center and pour in the yeast mixture. Stir until a dough forms. You may need to add a little more flour or water, depending on the consistency of the dough.
  3. Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until it is smooth and elastic. If the dough is sticky, sprinkle a bit more flour.
  4. Let it Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Chop the Vegetables: While the dough is rising, chop the green, red, and yellow peppers, onion, and tomato into small pieces. The vegetables should be cut uniformly to ensure even cooking.
  6. Preheat the Oven: Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat up as well.
  7. Divide the Dough: Once the dough has risen, punch it down and divide it into small portions (about 12-15). Roll each portion into a small, flat circle on a floured surface.
  8. Prepare the Mini Pizzas: Place the dough circles onto a baking sheet lined with parchment paper or a greased pizza stone. Lightly brush the dough with olive oil.
  9. Add the Filling: Top each dough circle with the chopped vegetables. Spread them evenly over the surface. You can also add a sprinkle of cheese if desired.
  10. Bake the Mini Pizzas: Place the baking sheet or pizza stone in the preheated oven. Bake for 12-15 minutes, or until the dough is golden brown and the vegetables are tender.
  11. Cool and Serve: Remove from the oven and let the mini pizzas cool slightly before serving. Garnish with additional chopped chives if desired.
