  • Flour: 250 grams – The main dry ingredient, giving the cookies their structure.
  • Apricot Jam: 160 grams – Adds a sweet and fruity filling to the cookies.
  • Coconut Flakes: 2 tablespoons – Provides a hint of tropical flavor and a slight crunch.
  • Powdered Sugar: For garnish – Adds a finishing touch of sweetness and a decorative look.

  1. Mix Wet Ingredients: In a large mixing bowl, beat the egg with a pinch of salt, vanilla sugar, and regular sugar until well combined. Add the oil and yogurt, stirring until smooth and fully incorporated.
  2. Add Dry Ingredients: Sift in the cornstarch, baking powder, and flour. Mix until a soft dough forms. The dough should be smooth and slightly sticky but not too wet.
  3. Form the Dough Balls: Take small portions of the dough (about the size of a walnut) and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about an inch apart.
  4. Flatten and Fill: Gently press down on each dough ball with your thumb or the back of a spoon to create a small indentation in the center. Fill each indentation with a small spoonful of apricot jam.
  5. Preheat and Bake: Preheat your oven to 180°C (360°F). Bake the cookies for about 15-18 minutes or until they are lightly golden around the edges.
  6. Cool: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. Add Finishing Touches: Once the cookies are cool, sprinkle them with coconut flakes and a dusting of powdered sugar for a beautiful, sweet finish.
