- Mix Wet Ingredients: In a large mixing bowl, beat the egg with a pinch of salt, vanilla sugar, and regular sugar until well combined. Add the oil and yogurt, stirring until smooth and fully incorporated.
- Add Dry Ingredients: Sift in the cornstarch, baking powder, and flour. Mix until a soft dough forms. The dough should be smooth and slightly sticky but not too wet.
- Form the Dough Balls: Take small portions of the dough (about the size of a walnut) and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about an inch apart.
- Flatten and Fill: Gently press down on each dough ball with your thumb or the back of a spoon to create a small indentation in the center. Fill each indentation with a small spoonful of apricot jam.
