- Prepare the Zucchini Base: Start by grating the zucchinis into a large bowl. Sprinkle them with a pinch of salt and let them sit for about 10 minutes. This helps draw out excess moisture.
- After 10 minutes, squeeze the grated zucchini to remove as much water as possible. You can use a clean kitchen towel or cheesecloth to do this.
- Mix the Ingredients: In the same bowl, add the egg, sour cream (or Greek yogurt), black pepper, and flour to the grated zucchini. Mix until well combined. The mixture should be thick enough to hold its shape but still spreadable.
- Cook the Zucchini Base: Heat a tablespoon of olive oil in a large non-stick pan over medium heat.
- Spread the zucchini mixture in the pan, pressing it down evenly to form a round base, similar to a pizza crust.
- Cook the zucchini base for about 3-4 minutes on each side, or until golden brown and crispy.
- Add Toppings: Once the zucchini base is cooked, reduce the heat to low and arrange the tomato slices, mozzarella cheese, and sweet peppers (if using) on top.
- Sprinkle with dry basil for added flavor.
- Melt the Cheese: Cover the pan with a lid and let the cheese melt, which should take about 2-3 minutes.
- Serve and Enjoy: Once the cheese is melted and bubbly, remove the zucchini "pizza" from the pan and transfer it to a serving plate.
- Slice it up and enjoy it hot. This dish is best served fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
