  • 2 large egg whites
  • Pinch of salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon lemon zest rounded
  • 3 cups roasted almonds Marcona almonds are ideal
  • 1 cup roasted pistachios
  • 2 sheets edible wafer paper or lightly greased plastic wrap
