Honey Cookies with Sour Cream

  • Honey – 100 g about 1/3 cup
  • Egg – 1 large
  • Sour cream – 100 g about 1/3 cup
  • Vegetable oil – 2 tablespoons
  • Sugar – 1-3 tablespoons I used 1 tablespoon for moderate sweetness
  • Salt – 1/3 teaspoon
  • Baking soda – 1 teaspoon without a mound
  • Flour – Approximately 300 g about 2 1/2 cups, more or less depending on dough consistency
  • Baking temperature – 180°C 350°F
  • Baking time – 12 minutes or until golden brown

Method
 

Preparation
  1. Mix the Honey and Sour Cream: In a large mixing bowl, add 100 g of honey and 100 g of sour cream. Stir well until the mixture is smooth and combined.
  2. Add the Egg and Oil: Crack 1 large egg into the honey and sour cream mixture, and add 2 tablespoons of vegetable oil. Mix thoroughly until all the ingredients are fully incorporated.
  3. Add Sugar and Salt: Depending on your desired sweetness, add 1 to 3 tablespoons of sugar (I used 1 tablespoon for a mild sweetness). Add 1/3 teaspoon of salt to balance the flavors. Stir until the sugar dissolves.
  4. Add Baking Soda: Add 1 teaspoon of baking soda to the wet mixture. Stir well to ensure the baking soda is evenly distributed. The baking soda will react with the sour cream and honey to give the cookies a light, fluffy texture.
  5. Add the Flour: Gradually add the flour, starting with 200 g and adding more as needed. Mix with a spoon or spatula until the dough starts to come together. The final dough should be soft but not sticky. You may need around 300 g of flour in total, but this can vary slightly.
  6. Preheat the Oven: Preheat your oven to 180°C (350°F).
  7. Shape the Cookies: Lightly flour your hands and shape the dough into small, round balls about the size of a walnut. You can also use a cookie scoop to ensure evenly-sized cookies. Place the dough balls on a baking sheet lined with parchment paper, leaving some space between each cookie.
  8. Flatten the Cookies: Use the palm of your hand or the back of a spoon to gently press down on each dough ball, flattening them slightly.
  9. Bake: Place the cookies in the preheated oven and bake for approximately 12 minutes, or until the edges are golden brown. Keep an eye on them as baking times can vary slightly depending on your oven.
  10. Cool the Cookies: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
  11. Serve and Enjoy: These honey cookies are best enjoyed slightly warm or at room temperature. Serve them with tea, coffee, or a glass of milk for a delightful snack.
