Preparation
- Wash the parsley stalks and place them in a pot with 2 cups of water.
- Cook until the parsley stalks are soft.
- Wash a pinch of parsley leaves and set them aside.
- Let the cooked parsley mixture cool.
- Finely chop half an onion.
- In a mixing bowl, combine the chopped onion with 250 grams of minced meat.
- Season the meat mixture with chili pepper, black pepper, and salt to taste.
- Mix well and refrigerate the mixture.
- Mash 2 eggs with a blender until smooth.
- In a large mixing bowl, combine 3.5 cups of flour (350 grams) and 1 teaspoon of salt. The amount of flour may vary, so add it gradually.
- Add the cooled parsley mixture to the flour mixture.
- Knead the mixture into a soft dough that does not stick to your hands.
- Divide the dough into 2 parts. Place one part in a bag to prevent it from drying out.
- Roll out the remaining dough on a floured surface to a thickness of about 35 cm.
- Use a glass or mold to cut out circles from the dough.
- Roll out the remaining dough in the same way.
- Place a small amount of the minced meat mixture in the center of each dough circle.
- Fold and seal the dough as shown in the video.
- Bring a pot of water to a boil and add a pinch of salt.
- Carefully place the ravioli in the boiling water and cook until they float to the top and are tender.
- In a bowl, combine 1 bowl of yogurt with 2 minced garlic cloves and a pinch of salt.
- Mix well.
- Drain the cooked ravioli and place them on a serving platter.
- Drizzle with yogurt sauce and enjoy!
