- In a large mixing bowl, combine the all-purpose flour and salt. Stir to mix evenly.
- Create a well in the center of the flour mixture and pour in the extra-virgin olive oil.
- Gradually add the hot water while stirring with a wooden spoon until a dough forms.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
- Divide the dough into equal portions, depending on the size of flatbreads you want.
- Roll each portion into a ball and then flatten it with a rolling pin into a thin, round flatbread.
- Heat a non-stick skillet or griddle over medium-high heat. Cook each flatbread for 1-2 minutes on each side, or until they are golden brown and have a few charred spots.
- Remove the flatbreads from the skillet and cover with a clean kitchen towel to keep them soft and warm.
