- Prepare the Vegetables: Start by chopping the onion and setting it aside. Grate the carrot, and dice the green, red, and yellow peppers, as well as the potatoes.
- Sauté the Vegetables: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, about 3-5 minutes.
- Add the grated carrot and diced peppers to the pot. Continue to sauté for another 5 minutes, allowing the vegetables to soften and release their flavors.
- Add the Potatoes: Add the diced potatoes to the pot, stirring to combine them with the sautéed vegetables.
- Add Water and Season: Pour in the water, making sure all the vegetables are submerged. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Adjust Seasoning and Serve: Taste the soup and adjust the seasoning if necessary. If you prefer a thicker consistency, you can mash some of the potatoes with a fork or blend a portion of the soup before serving.
- Serve Hot: Ladle the soup into bowls and serve hot. You can garnish it with fresh herbs like parsley or chives for added flavor and color.
