  • 300g (2 cups) all-purpose flour
  • 3g (1/4 tsp) salt
  • 3g (1 tsp) instant yeast
  • 200g (0.85 cup) lukewarm water
  • 15ml (1 tbsp) cooking oil
  • Green onions, finely chopped
  • Extra salt and cooking oil for seasoning and cooking

Preparation
  1. Prepare the Dough: In a large bowl, combine the flour, salt, and yeast.
  2. Add the lukewarm water and oil, mixing until a sticky dough forms.
  3. Cover the bowl with a damp cloth and let the dough ferment for about 1 hour, or until it has doubled in size.
  4. Shape the Dough: On a floured surface, gently fold the dough several times to incorporate some air.
  5. Roll out the dough to a large square, approximately 35 x 35 cm (14 x 14 inches).
  6. Sprinkle the finely chopped green onions over the rolled-out dough and fold it over a few times to evenly distribute the onions.
  7. Cook the Flatbread: Heat a skillet over low heat and add a small amount of cooking oil.
  8. Transfer the dough to the skillet and cook for about 6 minutes on each side.
  9. Press with a spatula; if it springs back, it is done.
  10. Optional Baking: For a different texture, you can bake the flatbread in a preheated oven at 170°C (340°F) for 20 minutes.
