  • 600 g cauliflower, cut into florets
  • 1 sweet paprika pepper, chopped any color will work
  • A little vegetable oil
  • 1 bunch green onions, chopped
  • 3 cloves garlic, minced
  • 4 chicken eggs, beaten
  • Salt and ground black pepper to taste

Preparation
  1. Boil the Cauliflower: Bring a large pot of water to a boil. Add the cauliflower florets and cook for 5-7 minutes, or until tender-crisp. Drain the cauliflower and set it aside.
  2. Sauté the Aromatics: In a large skillet, heat a drizzle of vegetable oil over medium heat. Add the chopped sweet pepper, green onions, and minced garlic. Sauté for 3-4 minutes, until the vegetables soften and become fragrant.
  3. Incorporate the Cauliflower: Add the cooked cauliflower florets to the skillet with the sautéed vegetables. Stir well to combine everything.
  4. Scrambled Egg Magic: Pour the beaten eggs over the cauliflower mixture in the skillet. Using a spatula, gently fold the eggs into the cauliflower and vegetables, allowing the eggs to cook through. Season with salt and black pepper to taste.
  5. Whip Up the Sauce: While the scramble cooks, prepare the creamy sauce in a small bowl. Combine the sour cream, mayonnaise, minced garlic, grated cucumber, and chopped dill. Stir well until everything is incorporated.
  6. Serve and Enjoy: Plate the hot cauliflower scramble and generously drizzle with the creamy garlic dill sauce. This dish is delicious on its own, but you can also serve it with a side salad or whole-grain toast for a more complete meal.
