- Activate the yeast: In a small bowl, mix the fresh yeast with warm water and sugar. Stir until dissolved and let it sit for 5-10 minutes until foamy.
- Prepare the dough: In a large mixing bowl, combine the wheat flour and salt. Grate the butter into the flour mixture using a coarse grater. This helps evenly incorporate the butter into the dough for a soft texture.
- Add wet ingredients: Slowly add the activated yeast mixture, warm milk, and olive oil to the dry ingredients. Mix until the dough begins to come together.
- Knead: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes, or until it becomes smooth and elastic. The dough should be soft but not too sticky.
- Rest the dough: Place the dough in a lightly greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 50-60 minutes, or until it doubles in size.
- Shape the buns: After the dough has risen, punch it down and divide it into small portions. Flatten each portion and add a small amount of cheese as filling, then roll them up into buns.
- Brush and decorate: Place the buns on a baking tray lined with parchment paper. Brush them with a mixture of milk and olive oil. Sprinkle the tops with a mix of white and black sesame seeds for decoration.
- Bake: Preheat your oven to 180°C (356°F). Bake the buns for 25-30 minutes or until golden brown and fully cooked.
- Cool and serve: Remove the buns from the oven and let them cool on a wire rack. Enjoy them warm or at room temperature!
