- Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. The salt in the water will help season the pasta as it cooks.
- Add the pasta to the boiling water and cook according to the package instructions until al dente. Al dente means the pasta should be tender but still have a slight firmness when bitten.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta water before draining the rest. This starchy water will help bind the sauce and give it a silky texture.
- Prepare the Egg Mixture: While the pasta is cooking, crack the 6 eggs into a large mixing bowl. Add a pinch of salt and pepper, then beat the eggs until well combined.
- Stir in the grated Parmesan cheese. The cheese will dissolve slightly in the eggs, creating a thick, rich mixture that will coat the pasta beautifully.
- Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until it’s crispy and golden brown. The bacon should render its fat, which will infuse the dish with its smoky, savory flavor.
- Once the bacon is cooked, use a slotted spoon to remove it from the skillet, leaving the rendered bacon fat behind. Set the bacon aside on a paper towel-lined plate to drain any excess grease.
- Combine Everything: In the same skillet, add the butter to the rendered bacon fat. Allow the butter to melt over low heat, creating a rich, buttery base for the sauce.
- Add the drained pasta to the skillet and toss it in the butter and bacon fat until each piece is coated. This step ensures that the pasta is infused with flavor from the start.
- Remove the skillet from the heat to prevent the eggs from scrambling when they’re added. Quickly pour the egg and Parmesan mixture into the skillet, tossing the pasta continuously to create a creamy sauce.
- Gradually add the reserved pasta water, a little at a time, until the sauce reaches your desired consistency. The starch in the pasta water will help the sauce cling to the pasta and give it a smooth texture.
- Add Bacon and Serve: Stir the crispy bacon back into the pasta, ensuring it’s evenly distributed throughout the dish.
