- Prepare the Potatoes: Grate the peeled potatoes using a coarse grater. Place the grated potatoes in a colander and squeeze out as much liquid as possible. This helps in getting a crispier patty.
- Season the Potatoes: Transfer the grated potatoes to a mixing bowl. Add salt, paprika, and black pepper to taste. Mix well to distribute the seasoning evenly.
- Stir in chopped parsley and basil to incorporate some fresh herby flavors.
- Bind the Mixture: Add cornstarch to the seasoned potatoes. This will help bind the mixture.
- Crack the egg into the bowl and add the grated Parmesan cheese. Mix everything together until well combined. If the mixture feels too wet, you can add a bit more cornstarch or breadcrumbs to help it hold together.
- Form the Patties: Shape the potato mixture into small patties. If the mixture sticks to your hands, wet them slightly with water to make the shaping easier.
