Creamy Orzo with Asparagus and Goat Cheese

  • 3 tbsp butter
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 1/2 cups dried orzo
  • 1/4 cup white wine
  • 3 cups chicken broth
  • 1 lb asparagus, trimmed and cut into thirds
  • 2 tbsp goat cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Method
 

Preparation
  1. Sauté Aromatics: In a large skillet, melt the butter over medium-high heat.
  2. Add the minced shallot and garlic and cook, stirring, until they begin to soften, about 1 to 2 minutes.
  3. Cook Orzo: Add the dried orzo and white wine to the skillet.
  4. Continue to cook, stirring, until the white wine has evaporated, about 1 to 2 minutes.
  5. Add Broth: Stir in the chicken broth and bring the mixture to a simmer.
  6. Reduce the heat to medium and cook, stirring occasionally, until almost all of the liquid has been absorbed, about 7 to 8 minutes.
  7. Add Asparagus: Stir in the asparagus and cook, stirring constantly, until the asparagus is bright green and tender, about 2 to 3 minutes.
  8. Finish with Goat Cheese: Stir in the goat cheese until it is completely melted and the mixture is creamy.
  9. Season with salt and pepper to taste.
  10. Add Fresh Herbs: Stir in the chopped fresh parsley.
  11. Serve immediately for the best flavor and texture.
  12. You can also store leftovers in the refrigerator for up to 3 days.
