  • 3 garlic cloves, grated
  • 6 scallions, thinly sliced
  • 1 pound (455g) spinach leaves

  1. Prepare the Filling: Sauté the Onion and Garlic: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent and soft, about 3-4 minutes. Add the grated garlic and cook for another minute until fragrant.
  2. Cook the Spinach and Scallions: Add the sliced scallions to the skillet and cook for 2-3 minutes, until they begin to soften. Then, gradually add the spinach leaves, stirring constantly until the spinach is wilted and all the water has evaporated. This process should take about 5-7 minutes. Season with salt and pepper to taste. Remove the skillet from heat and let the filling cool slightly.
  3. Assemble the Bread: Once your bread dough is ready (you can use homemade dough or store-bought), roll it out on a floured surface to a rectangular shape. Spread the cooled spinach filling evenly over the dough, leaving a small border around the edges.
  4. Add the Cheese: If desired, sprinkle a generous amount of your favorite cheese (like feta, mozzarella, or cheddar) over the spinach filling.
  5. Roll and Shape: Carefully roll the dough, starting from one of the long sides, to form a log. Pinch the edges to seal. You can leave it as a log or twist it into a spiral or any shape you prefer.
  6. Bake the Bread: Place the shaped bread on a baking sheet lined with parchment paper. Let it rise for 20-30 minutes if you’re using a yeast dough.
  7. Preheat your oven to 375°F (190°C).
  8. Bake the bread for 25-30 minutes, or until it is golden brown and cooked through. If the top is browning too quickly, you can cover it with aluminum foil.
  9. Serve: Let the bread cool slightly before slicing. Serve warm for the best taste experience. It’s delicious on its own or paired with a side of scrambled eggs or a fresh salad.
