  1. Prepare the Dough: In a mixing bowl, combine the flour, salt, and baking soda. Slowly add the water while stirring to form a smooth dough.
  2. Knead the dough for about 5 minutes until it becomes soft and elastic. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  3. Prepare the Filling: While the dough is resting, chop the green onions and grate the cheese. Set them aside.
  4. Roll Out the Dough: After the dough has rested, divide it into equal portions. Dust your work surface with a mixture of flour and cornstarch.
  5. Roll out each portion of dough into a thin circle, about 1/8 inch thick.
  6. Add the Filling: Sprinkle the grated cheese and chopped green onions evenly over the surface of the dough circle.
  7. Roll the dough up into a log, then coil it into a spiral shape. Flatten the spiral gently with your hands and roll it out again to about 1/4 inch thick.
  8. Fry the Pancakes: Heat a skillet over medium heat and add a small amount of oil. Once the oil is hot, place a pancake in the skillet.
  9. Cook each side for about 2-3 minutes or until golden brown and crispy. Repeat with the remaining dough.
  10. Final Touch: While the pancakes are still hot, brush them with melted salted butter for an extra layer of flavor.
