  • Pinch of baking soda
  • 50 g cheese, grated cheddar, mozzarella, or your favorite
  • ¼ cup all-purpose flour for coating
  • ¼ cup cornstarch for coating
  • 20 g salted butter, melted
  • Oil for frying

  1. Simple Dough Creation: In a mixing bowl, combine the water and salt. Stir well until the salt dissolves completely. Gradually add the flour to the wet ingredients, mixing until you have a smooth and cohesive dough.
  2. Flavor Boost: Add the chopped green onions, a pinch of baking soda for extra fluffiness, and your grated cheese of choice to the dough. Gently fold everything together until well combined.
  3. Coating Station: On a clean surface, prepare your coating station by mixing equal parts flour and cornstarch. This coating will give your fritters a delightful crispy exterior.
  4. Shape and Coat: Divide the dough into small, bite-sized portions. On the floured surface, gently flatten each portion into a thin pancake shape. Then, coat each pancake in the flour and cornstarch mixture, ensuring it's evenly covered.
  5. Frying Finesse: Heat oil in a frying pan over medium heat. Once the oil is hot but not smoking, carefully add the coated pancakes. Fry for 3-4 minutes per side, or until they're golden brown and cooked through.
  6. Drain and Butter Up!: Transfer the fried fritters to a paper towel-lined plate to drain any excess oil. While they're still hot, brush them with the melted butter for extra flavor and shine.
