  • 200 g red lentils 7 oz
  • 1 cup white cabbage 240 ml, chopped
  • 1 onion, finely chopped
  • Olive oil for cooking
  • 4 - 5 cloves of garlic, minced
  • 1 large sweet potato, peeled and grated
  • 50 g breadcrumbs 1/2 cup or 120 ml
  • Juice from 1/2 lemon
  • A handful of parsley, chopped
  • 2 tsp freshly grated ginger
  • 1 teaspoon baking powder
  • 1 - 2 tsp salt
  • 1 tsp caraway seeds
  • 1 tsp garam masala powder
  • 1 tsp cayenne pepper

Method
 

Preparation
  1. Cook the lentils: Cook the red lentils in boiling water for about 15-20 minutes, or until tender. Drain and let them cool.
  2. Prepare the mixture: In a large bowl, combine the cooked lentils, chopped cabbage, finely chopped onion, minced garlic, grated sweet potato, and breadcrumbs.
  3. Add flavor: Add the lemon juice, chopped parsley, freshly grated ginger, baking powder, salt, caraway seeds, garam masala powder, and cayenne pepper to the mixture. Mix well until all ingredients are thoroughly combined.
  4. Form the patties: Heat olive oil in a non-stick skillet over medium heat. Form the mixture into small patties.
  5. Cook the patties: Cook the patties in the skillet for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Serve: Serve the patties hot with a side of your favorite dip or salad.
