  • 2.5 tablespoons rice flour (or any flour of your choice): Acts as a thickening agent to give the pie structure without using wheat flour. You can substitute with other gluten-free flours if preferred.
  • ½ teaspoon baking powder: Helps the pie rise and become fluffy, giving it a light and airy texture.

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). This ensures that your pie will bake evenly and come out perfectly golden brown.
  2. Prepare the Ingredients: In a large mixing bowl, combine the cottage cheese and grated apple. Mix well to evenly distribute the apple throughout the cheese.
  3. Beat the egg lightly and add it to the mixture, stirring to combine.
  4. Add the topinambur syrup to the mixture, adjusting the amount to your desired level of sweetness. Mix until everything is well incorporated.
  5. Combine Dry Ingredients: In a separate bowl, sift together the rice flour and baking powder. This helps to evenly distribute the baking powder and ensures a smooth texture.
  6. Mix the Batter: Gradually add the dry ingredients to the wet mixture, stirring until you have a smooth batter. The rice flour will help to bind the ingredients and create a cohesive mixture.
  7. Prepare the Baking Dish: Lightly grease a baking dish or line it with parchment paper to prevent sticking. You can use any size dish, but a 9-inch pie dish or a similar-sized pan works well.
  8. Bake the Pie: Pour the batter into the prepared dish and smooth the top with a spatula.
  9. Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown. A toothpick inserted into the center should come out clean.
