Ingredients:

  • 3 tortillas
  • 1 or 2 tomatoes, sliced
  • 100 grams of cheese, grated
  • 1/2 bell pepper, sliced
  • 3 eggs
  • 150 grams of milk
  • Salt to taste
  • Pepper to taste
  • 50 grams of parsley, chopped
  • Vegetable oil for frying

 

Directions:

  1. Preheat oven to 180°C (356°F) and line a baking sheet with parchment paper.
  2. Cut the tortillas into thin strips and arrange on the prepared baking sheet.
  3. Whisk eggs and milk in a bowl; season with salt and pepper.
  4. Heat a bit of vegetable oil in a skillet over medium. Dip tortilla strips in the egg mixture to coat both sides, then fry until golden. Place them back on the baking sheet.
  5. Top fried strips with grated cheese, tomato slices, and bell pepper.
  6. Bake for about 10 minutes or until the cheese is melted and bubbly.
  7. Garnish with chopped parsley before serving.
