For the churros:

  • 1 cup water (240ml)
  • 2 tablespoons unsalted butter (28g)
  • 1 tablespoon sugar (13g)
  • 1/8 teaspoon salt
  • 1 cup all-purpose flour (120g)
  • 1 large egg (50g)
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

For the cinnamon sugar:

  • 1/2 cup sugar (100g)
  • 1 teaspoon cinnamon

For the chocolate dipping sauce:

  • 3 oz bittersweet chocolate (85g)
  • 1/2 cup heavy cream (120ml)

 

Directions:

  1. In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and add the flour, stirring vigorously until the mixture forms a ball, about 1 minute.
  3. Remove from heat and let the dough cool for a few minutes. Add the egg and vanilla extract, mixing well until the dough is smooth.
  4. Transfer the dough to a piping bag fitted with a large star tip.
  5. Heat oil in a deep fryer or large pot to 350°F (175°C).
  6. Pipe strips of dough into the hot oil, cutting them with scissors to the desired length. Fry until golden brown, about 2-3 minutes, turning once. Drain on paper towels.
  7. Mix the sugar and cinnamon in a shallow dish. Roll the warm churros in the cinnamon sugar to coat.
  8. For the chocolate dipping sauce, heat the heavy cream in a small saucepan until it begins to simmer. Pour over the chopped bittersweet chocolate and let sit for a minute, then stir until smooth.
  9. Serve the churros warm with the chocolate dipping sauce.
