Ingredients:
- 50g sunflower seeds
- 50g pumpkin seeds
- 50g toasted sesame seeds
- 200g pitted dates
- 200g dried apricots (reserve some pieces for later)
- 80g walnuts
- 1 tablespoon orange zest
- 1 teaspoon liquid vanilla
Directions:
- Toast the Seeds:
- In a pan, toast 50g of sunflower seeds and 50g of pumpkin seeds until golden.
- Separately, toast 50g of sesame seeds until fragrant.
- Prepare the Dried Fruits:
- In a food processor, blend 200g of pitted dates and 200g of dried apricots into a sticky paste.
- Set aside a few pieces of apricots to mix in later for added texture.
- Combine the Ingredients:
- In a large mixing bowl, combine the toasted sunflower seeds, pumpkin seeds, and sesame seeds with the date-apricot paste.
- Add 80g of chopped walnuts, 1 tablespoon of orange zest, and 1 teaspoon of liquid vanilla.
- Add the reserved apricot pieces for some chunky bites.
- Mix everything well until fully incorporated.
- Shape and Chill:
- Wrap the mixture in cling film or transfer it to a container, pressing down firmly.
- Chill in the refrigerator for at least 2 hours to firm up.

- Once chilled, cut into squares or roll into balls, and enjoy!
