  • 100g mozzarella cheese, grated
  • 1/4 teaspoon salt
  • A handful of fresh parsley, finely chopped for garnish

 

Directions:

  1. Begin by peeling the potatoes and cutting them into thin, even strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  2. Thoroughly pat the potatoes dry with a clean kitchen towel or paper towels.
  3. Place the dried potato strips in a large bowl, sprinkle with cornstarch, and toss until they are evenly coated.
  4. Heat a large pot of oil over medium-high heat. Once the oil is hot, carefully add the potato strips in batches, frying until golden brown and crispy, about 5-7 minutes per batch.
