Ingredients:

    • 2 eggplants
    • Olive oil
    • Salt and pepper
    • Sweet paprika
    • Oregano
    • 1 onion, chopped
    • 2 bell peppers, diced
    • 2 cloves of garlic, minced
    • 300g minced meat
    • Cumin
    • Ginger
    • Coriander
    • 250g tomato puree
    • 150ml water
    • 150g mozzarella, grated
    • 60g Parmesan, grated
    • Dried oregano

 

Directions:

      1. Preheat oven to 180°C (356°F).
      2. Cut the eggplants in half lengthwise and score the flesh. Brush with olive oil and sprinkle with salt, pepper, sweet paprika, and oregano.
      3. Bake the eggplants for 20 minutes.
      4. In a pan, heat some olive oil and sauté the onion, bell peppers, and garlic until soft.
      5. Add the minced meat and cook until browned. Season with salt, pepper, sweet paprika, cumin, ginger, and coriander.
      6. Stir in the tomato puree and water, and simmer for a few minutes.
      7. Spoon the meat mixture onto the baked eggplant halves. Top with mozzarella and Parmesan cheese, and sprinkle with dried oregano.
      8. Put back in the oven for about 15 minutes, or until the cheese is melted and golden.
