Baked Zucchini Delight

Ingredients:

  • 4 medium zucchini
  • 2 tablespoons olive oil

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil or non-stick cooking spray.
  2. Wash and pat dry the zucchini. Cut off the ends and slice them lengthwise into thin strips.
