Ingredients:

  • 4 very large Russet Potatoes
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 garlic cloves, minced
  • 1 1/2 cups whole milk (room temperature)
  • 1/2 cup heavy whipping cream (room temperature)
  • 3 ounces cream cheese (room temperature)
  • 10-12 oz mozzarella cheese (divided, use 1/2 cup for sauce)
  • 8-10 oz sharp cheddar cheese (divided, use 1/2 cup for sauce)
  • Salt
  • Ground or cracked black pepper
  • Cayenne red pepper
  • Green onions (for garnish)
  • Pork or turkey bacon (for garnish)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Slice 4 large Russet Potatoes thinly.
  3. Make a cheese sauce: Melt 3 tbsp butter in a saucepan, add minced garlic, then whisk in 3 tbsp flour. Gradually pour in 1 1/2 cups whole milk and 1/2 cup heavy cream, whisking constantly until thickened.
  4. Add 3 oz cream cheese, 1/2 cup mozzarella, and 1/2 cup sharp cheddar to the sauce. Stir until the cheeses are melted and the sauce is smooth. Season with salt, black pepper, and a pinch of cayenne red pepper for a kick.
  5. Layer half of the sliced potatoes in a greased casserole dish, then pour half of the cheese sauce over them. Repeat for another layer.
  6. Cover the casserole dish with foil and bake for 45-50 minutes until the potatoes are tender.
  7. Remove the foil, top the casserole with the remaining mozzarella and cheddar cheese, and bake uncovered at 400°F (200°C) for an additional 10-15 minutes or until the cheese is golden and bubbly.
