Zucchini Fritters
- Zucchini: 2 medium (700 g), grated
- Salt: 1/2 tsp
- Eggs: 2
- All-Purpose Flour: 3 tbsp
- Mozzarella Cheese: 100 g, grated
- Powdered Garlic: 1/2 tsp
- Black Pepper: to taste
- Vegetable Oil: for frying
Creamy Dill Sauce
- Sour Cream or Greek Yogurt: 1/2 cup
- Lemon Juice: 1 tbsp, freshly squeezed
- Salt: 1/4 tsp
- Black Pepper: to taste
- Fresh Dill: 1 tbsp, finely chopped
Instructions
Prepare the Zucchini
- Grate the zucchini and place it into a large bowl. Sprinkle with ½ tsp of salt, stir, and let sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze out the liquid from the zucchini using your hands or a nut milk bag. Transfer the squeezed zucchini to a clean bowl.
Mix the Fritter Ingredients
- Add the eggs, grated mozzarella cheese, all-purpose flour, powdered garlic, salt, and black pepper to the bowl with the zucchini.
- Stir until all the ingredients are well combined and the mixture is slightly thickened.
Cook the Fritters
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture into the hot oil and flatten slightly with a spatula to form a fritter.
- Cook the fritters for about 3 minutes on each side, or until they’re golden brown and crispy.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
Prepare the Creamy Dill Sauce
- In a small bowl, mix together sour cream or Greek yogurt, lemon juice, salt, black pepper, and chopped fresh dill until combined.
- Adjust seasoning if needed by adding more salt, pepper, or lemon juice to taste.
