Zucchini Fritters

  • Zucchini: 2 medium (700 g), grated
  • Salt: 1/2 tsp
  • Eggs: 2
  • All-Purpose Flour: 3 tbsp
  • Mozzarella Cheese: 100 g, grated
  • Powdered Garlic: 1/2 tsp
  • Black Pepper: to taste
  • Vegetable Oil: for frying

Creamy Dill Sauce

  • Sour Cream or Greek Yogurt: 1/2 cup
  • Lemon Juice: 1 tbsp, freshly squeezed
  • Salt: 1/4 tsp
  • Black Pepper: to taste
  • Fresh Dill: 1 tbsp, finely chopped

Instructions

Prepare the Zucchini

  1. Grate the zucchini and place it into a large bowl. Sprinkle with ½ tsp of salt, stir, and let sit for about 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze out the liquid from the zucchini using your hands or a nut milk bag. Transfer the squeezed zucchini to a clean bowl.

Mix the Fritter Ingredients

  1. Add the eggs, grated mozzarella cheese, all-purpose flour, powdered garlic, salt, and black pepper to the bowl with the zucchini.
  2. Stir until all the ingredients are well combined and the mixture is slightly thickened.

Cook the Fritters

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Scoop about 1/4 cup of the zucchini mixture into the hot oil and flatten slightly with a spatula to form a fritter.
  3. Cook the fritters for about 3 minutes on each side, or until they’re golden brown and crispy.
  4. Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.

Prepare the Creamy Dill Sauce

  1. In a small bowl, mix together sour cream or Greek yogurt, lemon juice, salt, black pepper, and chopped fresh dill until combined.
  2. Adjust seasoning if needed by adding more salt, pepper, or lemon juice to taste.

Serve and Enjoy

  1. Plate the zucchini fritters and add a dollop of creamy dill sauce on top of each one.
