Full Recipe:
Ingredients:
- 250g tagliatelle pasta, cooked al dente
- Olive oil
- 30 grams of butter, divided
- 500g (1 pound) shrimp, peeled and deveined
- Salt and pepper, to taste
- 1 head of garlic, sliced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 glass of dry white wine
- A handful of fresh parsley, chopped
Directions:
- Cook the Pasta: Begin by cooking the tagliatelle pasta in a large pot of salted boiling water until al dente. Follow the package instructions for the best results. Once cooked, drain the pasta and set aside, reserving a little pasta water for the sauce if needed.
- Sauté the Shrimp: In a large skillet, heat a drizzle of olive oil and 15 grams of butter over medium heat. Add the shrimp to the skillet, season with salt and pepper, and sauté until they are pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Make the Sauce: In the same skillet, add another drizzle of olive oil and the remaining 15 grams of butter. Add the sliced garlic and cook until fragrant but not browned, about 1 minute. Stir in the lemon zest, lemon juice, and dry white wine. Let the sauce simmer for a few minutes to reduce slightly.
- Combine: Return the cooked shrimp to the skillet with the sauce. Add the cooked tagliatelle pasta to the skillet as well, tossing everything together to ensure the pasta is well coated in the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Garnish and Serve: Stir in the chopped fresh parsley, and adjust the seasoning with salt and pepper if necessary. Serve the shrimp tagliatelle immediately, garnished with extra parsley and lemon wedges on the side if desired.
