Zucchini Cheese Muffins Recipe

  • 1 medium zucchini, grated do not squeeze out the moisture
  • 1/4 red capsicum, finely diced optional
  • 1 cup grated cheese your choice of cheese
  • 2 large eggs
  • Salt & pepper to taste more seasoning as you prefer
  • 125g (1 cup) all-purpose flour
  • 1 tsp baking powder
  • Butter to grease the muffin tin

Method
 

Preparation
  1. Preheat the Oven: Preheat your oven to 200°C (392°F) and place the rack in the middle position.
  2. Prepare the Batter: In a mixing bowl, whisk together the eggs, salt, pepper, and any other preferred seasonings until well combined.
  3. Add the grated zucchini, red capsicum (if using), and grated cheese. Mix well to combine.
  4. Add half of the all-purpose flour to the mixture and mix until combined.
  5. Add the remaining flour and baking powder. Mix until everything is well incorporated.
  6. Prepare the Muffin Tin: Grease the muffin tin with butter to prevent sticking.
  7. Fill the Muffin Tin: Spoon the zucchini mixture into the muffin tin, filling each compartment almost to the top. This recipe should make about 9 muffins.
  8. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes.
  10. Transfer the muffins to a wire rack to cool completely before serving.
