  • 2 eggs: They act as a binder, holding all the ingredients together.
  • Pepper, to taste: Adds a bit of spice and complements the cheese and zucchini.
  • Fresh chives, chopped (for garnish): These add a burst of fresh flavor and a pop of color to the finished dish.

  1. Prepare the Zucchini: Start by washing the zucchini thoroughly under running water. This step is crucial to remove any dirt or pesticides.
  2. Using a box grater or food processor, grate the zucchini. You want it to be finely shredded to blend well with the other ingredients.
  3. Place the grated zucchini in a colander, sprinkle it with a pinch of salt, and let it sit for about 10-15 minutes. This resting time allows the salt to draw out the excess water from the zucchini.
  4. After the zucchini has rested, use your hands or a clean kitchen towel to squeeze out as much moisture as possible. Removing the excess water is key to preventing a soggy bake.
  5. Combine Ingredients: In a large mixing bowl, combine the well-drained zucchini, oatmeal, and grated cheese. Mix until all the ingredients are evenly distributed.
  6. In a separate bowl, crack the eggs and beat them lightly with a pinch of salt and pepper. The eggs should be well combined and slightly frothy.
  7. Pour the beaten eggs into the zucchini mixture, stirring well to ensure everything is well coated and mixed. The mixture should be slightly thick but still pourable.
  8. Prepare for Baking: Preheat your oven to 350°F (175°C). While the oven heats, grease a medium-sized baking dish with a bit of oil or line it with parchment paper. This prevents sticking and makes cleanup easier.
  9. Pour the zucchini mixture into the prepared baking dish. Use a spatula to spread it out evenly, ensuring that the bake will cook uniformly.
  10. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the bake is set in the middle. To check for doneness, insert a toothpick or a knife into the center of the bake; if it comes out clean, your dish is ready.
