  • 8 ounces cooked tortellini serves as the hearty base
  • 4 ounces prosciutto crispy for crunch
  • 8 ounces mozzarella balls creamy pearls
  • 1 cup corn kernels sweet
  • 2 peaches diced for sweetness
  • 1 cup cherry tomatoes sliced
  • 1 cup fresh basil chopped
For the Dressing
  • 1/4 cup olive oil rich base
  • 2 tablespoons hot honey adds sweetness
  • 1 tablespoon Dijon mustard for tanginess
  • 2 tablespoons red wine vinegar bright acid
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Lay prosciutto in a single layer on the baking sheet and bake for about 10-15 minutes until crispy.
  3. In a large bowl, combine cooked tortellini, mozzarella balls, corn, diced peaches, sliced cherry tomatoes, and chopped basil.
  4. Chop the baked prosciutto and add to the salad mixture.
  5. In a glass measuring cup, whisk together olive oil, hot honey, Dijon mustard, red wine vinegar, minced garlic, salt, and pepper.
  6. Pour the dressing over the salad and toss gently until well coated.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
