  • 2 large Cucumbers Choose long English cucumbers
  • 1/4 cup Fresh Dill Chopped
  • 1/2 medium Red Onion Finely sliced
For the Dressing
  • 1 cup Greek Yogurt Full-fat recommended
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic Grated
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Method
 

Dressing Preparation
  1. In a small bowl, combine Greek yogurt, olive oil, lemon juice, grated garlic, salt, and pepper. Mix until smooth and creamy, then set aside.
Salad Assembly
  1. Slice cucumbers in half lengthwise and cut into thin half-moon slices.
  2. Finely slice the red onion.
  3. In a large serving bowl, combine cucumber slices, red onion, and chopped dill.
  4. Pour the creamy dressing over the salad mixture and toss everything together until well combined.
  5. Serve immediately or chill in the fridge for a bit before serving.
