  • 1 pound Flank Steak substitute with skirt or sirloin steak
  • 1/4 cup Fresh Lime Juice use bottled lime juice if fresh isn't available
  • 1/4 cup Olive Oil avocado oil works as a substitute
  • 1/4 cup Fresh Cilantro, chopped parsley can be a good alternative
  • 3 cloves Garlic, minced garlic powder can be used in a tight spot
  • 1 tsp Ground Cumin can swap with taco seasoning for different flair
  • 1 tsp Chili Powder replace with paprika for a sweeter taste
  • 1 tsp Salt adjust according to dietary preferences
  • 1/2 tsp Black Pepper use white pepper if preferred
For the Bowl Base & Toppings
  • 1 cup Cooked Rice consider cauliflower rice for a low-carb option
  • 1 can Black Beans, rinsed and drained kidney beans can also be a good substitute
  • 1 cup Corn use fresh or frozen, or omit for low-carb variations
  • 1 cup Cherry Tomatoes, halved diced bell peppers work just as well
  • 1 whole Avocado, sliced swap with Greek yogurt for a twist
  • 1/2 cup Red Onion, diced skip or use green onions for milder taste
  • 1/2 cup Feta Cheese, crumbled omit for a dairy-free version
  • Extra Cilantro for garnish
  • Lime wedges for serving

Preparation Steps
  1. Marinate the Steak: In a bowl, whisk together lime juice, olive oil, cilantro, minced garlic, cumin, chili powder, salt, and black pepper. Add the flank steak, coating it well. Cover and refrigerate for 30 minutes, or up to 4 hours for deeper flavor.
  2. Prepare Rice and Beans: Cook rice according to package instructions until fluffy. In a saucepan, heat the black beans on medium, adding seasoning if desired. If using fresh corn, cook it during this time as well.
  3. Cook the Steak: Preheat the grill to medium-high. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare (130°F). Once cooked, let the steak rest for 5-10 minutes, then slice it against the grain.
  4. Assemble Bowls: Start by dividing the cooked rice among serving bowls. Layer on black beans, corn, halved cherry tomatoes, sliced avocado, and diced red onion. Add the sliced steak on top, sprinkle with feta if using, and garnish with extra cilantro and lime wedges.
